We don’t have a garbage disposal. Or air conditioning. Or a refrigerator, microwave, dishwasher, snow blower, television, or sprinkler system. Heck, we don’t even have a shower. And yet we are certainly living in the 21st century with our laptop, ipod, and cell phone. It’s just that we are also dipping our toes into the technologies of past decades with our hand crank meat grinder and manual typewriter.

The blessing of living today is choosing the best parts of centuries of civilization. There’s no need to subscribe only to modern gadgets when the convieneces of the 50′s are still convienent. And so we bake our own bread with the assistance of a stand mixer. We shovel our own driveway while wearing polypropelene long underwear. We just pick and choose.
