Now that you’ve had time to practice poaching eggs and preparing hollandaise sauce, let’s put it all together and make eggs florentine! The real challenge of this meal is having everything come out hot at the same time. So get everything you can out and ready and chopped before you cook anything.eggs florentine diagram

You’ll need:
split english muffins
loosely chopped spinach
a little shallot, onion, or garlic chopped
eggs (for poaching and for hollandaise)
melted butter
lemon juice
hot sauce

All the things you’ll want hot at the same time:
toasted english muffins
sauteed spinach and shallot/onion/garlic
poached eggs
hollandaise sauce

Then assemble in the above order on warm plates. Serve to your astonished dinner-mates. If you’re feeling really cocky about your ability to time multiple foods, roasted potatoes go really well with this.
